 If I could eat one candy for the rest of my life, it would probably be these homemade almond butter cups! They’re incredibly creamy and delicious. They’re healthy too because they're made with dark chocolate and no sugar. My kids love getting creative with all of the fillings and and often add in melted Cocomel caramels and Nature Nates popped sorghum. My husband thinks these taste just like buckeyes! Enjoy!

-1/2 cup dark chocolate 
-1 teaspoon
 coconut oil 
-1.5 tablespoon blanched almond butter

-1 teaspoon powdered monkfruit 
-Other fillings such as coconut, pistachios, popped sorghum or melted caramels

1. Add the chocolate and coconut oil into a glass measuring cup or microwave safe bowl and warm in 30 second increments, stirring in between, until the chocolate is completely melted. 
2. Meanwhile, add the almond butter and monkfruit into a separate bowl and stir with a rubber spatula until well combined. 
3. Pour the melted chocolate into silicone mold of choice. 
4. Spoon the almond butter and/or other fillings into the chocolate. 
5. Transfer to the freezer and freeze until completely solid.
6. Remove the chocolates from the mold and enjoy! Store any remaining chocolate in an airtight container. Enjoy!
