Beef and broccoli is a quick stir fry that is pure comfort food for me!  I sometimes use broccolini in this dish when I don’t have broccoli.  I like to top it with ground flax and kimchi, which not only tastes amazing but is a great prebiotic and probiotic combination that’s good for gut microbes (broccoli, onion, mushrooms, and garlic are other prebiotic foods in this dish FYI! And I’m pretty sure the hot sauce has probiotics, since it’s fermented). Enjoy!

-1/2 lb grass fed flank steak, cut into pieces 
-1/2 cup onion, chopped 
-1 cup broccoli or 4 stalks broccolini 
-1/4 cup mushrooms
-Extra virgin olive oil or avocado oil, for cooking

-Toppings such as fermented hot sauce, kimchi, black sesame seeds, green onions, and ground flax

Sauce 
-1 tablespoon arrowroot powder
-3/4 cup water 
-1/2 teaspoon salt 
-2 tablespoon coconut aminos 
-2 cloves garlic, pressed 

 


1. Coat the bottom of a Lodge cast iron skillet with oil and heat over medium heat. 
2. Add the onions and sauté for about 3 minutes. 
3. Add the beef and cook until cooked through.
4. Add the broccoli and mushrooms and sauté until the mushrooms are cooked. 
5. Combine all of the sauce ingredients into a bowl and whisk together. 
6. Pour the sauce into the pan and stir. 
7. Cook until the sauce begins to thicken, about 1 minute. 
8. Serve over pressure cooked basmati rice and top with toppings such as hot sauce, kimchi, green onions, ground flax, and black sesame seeds. Enjoy!
