My mom often makes plantain chips, which is a snack that we all love!  They're great on their own or dipped in guacamole.  It is one of the easiest recipe to make and tastes so delicious.  Enjoy!

-1 green plantain
-Mix of avocado oil and extra virgin olive oil (for frying)
-Salt (to taste) 

 

 

 

1. Peel the plantain by cutting the ends off and running the knife down the middle of the fruit. Slice into thin circles.
2. Coat the bottom of a pan with a mixture of avocado and olive oil and turn the heat on to medium.
3. When the oil is hot, begin frying the plantain in batches, as not to crowd the pan.
4. Fry for about 3-4 minutes (depending on how thinly you sliced the plantain), then flip and fry the other side for the same amount of time.
5. Transfer the chips to a cooling rack lined with a paper towel. Sprinkle with salt and enjoy or store in an airtight container!
