There's nothing better than creamy sweet potatoes cooked in a cast iron skillet!  This dish contains just a few ingredients and is so easy to make.  My whole family loves it.  It’s great as a side, on top of a salad, in a sandwich, or even stuffed in sushi.  Enjoy!

-1 large or 2 small sweet potatoes, peeled and cut into cubes
-1/2 of a small onion, chopped
-1 tablespoon
 homemade butter (ghee, French butter, or extra virgin olive oil)
-1 green onion or
chives, chopped (optional)
-1/4 cup of organic heavy cream (or coconut cream)
-Salt or nutritional yeast to taste (optional)

1. Melt the butter in a Lodge cast iron skillet over medium low heat.
2. Add the onions and cook for about 5 minutes.
3. Add the sweet potatoes and cook until they are softened, about 10 minutes. You can check with a fork to see if they are finished (it should easily go through the sweet potato).
4. Stir in the heavy cream and cook for 1 minute until most of the liquid is absorbed.
5. Sprinkle with salt or nutritional yeast
and serve. Enjoy!
