My kids frequently request my chocolate waffles!  They're so fluffy and delicious.  We often pre-make the batter at the beginning of the week, which saves a lot of time as the kids get ready for school in the morning.  I use Otto's Naturals cassava flour and corn free baking powder for this recipe, which makes all the difference.  Enjoy!

-1 pastured egg
-1 tablespoon extra virgin olive oil

-1 cup homemade buttermilk (or A2 casein milk)
-1 teaspoon pure vanilla extract 
-3/4 cup cassava flour

-2 teaspoons corn and aluminum free baking powder
-3 tablespoons monk frui
t sweetener

-2 tablespoons non-alkalized coca powder

-Toppings such as hot fudge, fresh berries, or homemade whipped cream

1. Turn on your waffle maker.
2. Combine all of the ingredients into a bowl and whisk until smooth.  If too thick, add more milk, about 1 tablespoon 
at a time. This depends on the size of your egg.
3. Cook according to your waffle maker's instructions.
4. Enjoy with
chocolate hot fudge, berries, or whipped cream!
